Weeds & Seeds Wild Berry Love Bites

Ingredients 

  • 1 3/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup dried cherries (diced)
  • 1/4 cup dried blueberries
  • 3/4 cup Weeds & Seeds or Wild Berry™
  • 1/4 cup unsweetened coconut
  • 1/4 cup cooked quinoa
  • 1/4 teaspoon baking soda
  • 1/4 cup honey
  • 1/4 cup melted butter
  • 1/4 cup oil
  • 1 teaspoon vanilla

Directions 

Preheat oven to 350°

Oil 24 cup mini muffin pan

Pour 1 cup oats into food processor, process 1 minute, add remaining oats, sugar, cherries, blueberries, Weeds & Seeds, coconut, quinoa & baking soda.

Pulse till fruit is in small pieces. Pour in honey, melted butter, oil and vanilla. Pulse until just combined.

Spoon into prepared mini muffin tins. Fill to top and gently pat down.

Bake at 350° for 12 minutes or till slightly browned. Cool slightly in pan then remove bites from the pan.

Store in an airtight container 4-5 days in the fridge or they can be frozen.


For some added fun, let kids decorate the Love Bites with their favorite toppings. Top with a chocolate kiss when warm from the oven or a simple glaze of icing sugar and milk flavored with a drop of natural almond extract and top with a whole dried cherry.

Kids take a lot of pride in preparing for a family dinner, whether it's making dessert or helping with the main course. Let them participate in choosing a meal plan, visiting the market for ingredients, setting the table, making a fancy menu, or whatever else their imagination creates. Sit back and be present as watching kids cook can take a lot of patience but is definitely worth the extra mess that may result.
