Blueberry Oatmeal Muffins

Great anytime muffins!
A healthy and delicious addition to your lunchbox!

  • 1/3 cup oatmeal or rolled oats
  • 1/3 cup Weeds & Seeds™ (grind w/ mortar & pestle)
  • 1/2 cup milk w/ 1 Tbsp apple cider vinegar

Soak together in milk for 20 minutes.  Then add:

  • 1 1/2 Tbsp melted butter
  • 1 egg
  • 1/3 cup brown sugar
  • 1/2 tsp vanilla

Mix together till well combined, then sift in:

  • 1/2 cup + 1 Tbsp gluten free flour or wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt

Mix together till just combined and put about 1 tbsp batter in the bottom of each muffin cup. Then add 1/2 cup blueberries to balance of batter and fill muffin cups.

For topping, mix together 1 Tbsp cold butter, 3 Tbsp flour & 1 Tbsp brown sugar. Mix w/ fingertips till crumbly & sprinkle over batter.

Makes 1 dozen muffins                                    
Bake at 375°F - 15 minutes.
