Blueberry Oatmeal Muffins
Great anytime muffins!
A healthy and delicious addition to your lunchbox!
- 1/3 cup oatmeal or rolled oats
- 1/3 cup Weeds & Seeds™ (grind w/ mortar & pestle)
- 1/2 cup milk w/ 1 Tbsp apple cider vinegar
Soak together in milk for 20 minutes. Then add:
- 1 1/2 Tbsp melted butter
- 1 egg
- 1/3 cup brown sugar
- 1/2 tsp vanilla
Mix together till well combined, then sift in:
- 1/2 cup + 1 Tbsp gluten free flour or wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
Mix together till just combined and put about 1 tbsp batter in the bottom of each muffin cup. Then add 1/2 cup blueberries to balance of batter and fill muffin cups.
For topping, mix together 1 Tbsp cold butter, 3 Tbsp flour & 1 Tbsp brown sugar. Mix w/ fingertips till crumbly & sprinkle over batter.
Makes 1 dozen muffins
Bake at 375°F - 15 minutes.
